Blueberry Pancakes

When in the back country it is important to start the day with a good breakfast. One of our favorites is blueberry pancakes. We use Bob’s Red Mill Buttermilk Pancakes & Waffle mix. This mix is easy to use and needs just a little oil and milk to complete. Spicing the pancakes up with blueberries is not that easy. Blueberries tend not to keep in fridge for very long. I found a great solution using freeze dried berries that I get at the health food store.

I use “Organic Just Blueberries – Freeze-dried“. These freeze dried berry will keep indefinitely. and I usually have a small container of them in my food pantry. Adding 1/2 cup of them to the mixed pancakes is just about right for the 3 off us.

Add a little maple surup and we have a great breakfast.
